Pineapple and Sauteed Veggie Pizza Recipe

 

If Sesame Street decides to bring on a new character… it should be me… the Pizza Monster.

I. Love. Pizza.

Breakfast, lunch, dinner… doesn’t matter what time of day. PIZZA IS GREAT. ALWAYS!

I call this my “lazy pizza” recipe, because almost none of it is made from scratch. More often than not, the recipes I post on my site call for you to make your own when it comes to the sauces, dressings, and seasonings. But this one is for the days where it’s too hot to be slaving over a stove, or you simply don’t have the time to concoct the perfect marinara sauce to flavor this sexy thing. So grab whatcha got, clean or not, and create a masterpiece!

 

Pineapple and Sauteed Veggie Pizza Recipe

 

PINEAPPLE & SAUTEED VEGGIE PIZZA

INGREDIENTS

1 Whole Arnold Pocket Things Pita
1/3 Cup Buitoni, All Natural Marinara Sauce
1/4 Cup Lucerne, Natural Reduced Fat Mozzarella
2 oz Fresh Pineapple
2 Slices of Red Onion
1/4 Red Bell Pepper

DIRECTIONS

Oven: Pre-Heat to 350 degrees Fahrenheit
Microwave: Set to 1 minute, 15 seconds (cook time will vary depending on the microwave).

Chop the red onion, bell pepper and pineapple into small, bite size pieces. Use non-stick spray or a small amount of oil and sautee the onion and pepper (leave the pineapple to the side). Place the pita on a microwave-safe plate (if microwaving) or a lightly greased baking sheet (if using the oven). Spread 1/3 cup of the marinara sauce evenly over the pita. When the onion and bell pepper are done, add them evenly over the marinara covered pita bread. Add the 1/4 cup of mozzarella evenly over the whole thing. Finally, add the chopped pineapple to the pizza. Bake for approximately 20 minutes (the cheese should be melted… if you prefer, leave it in until lightly brown… you won’t want it to be black though… so keep an eye on it!). Or, microwave on high for approximately a minute and fifteen seconds (microwave oven times vary). With either method, you’ll want to keep an eye on your glorious piece of heaven. After it’s finished, remove from the oven and let cool for a few minutes. Use a pizza slicer to cut it, or fold it in half and shotgun the entire thing. Up to you. (Jk, please don’t choke).

You’re welcome to add things like shrimp, chicken, or your choice of meat to increase the protein content. I just didn’t feel like any meat on mine. You can also add red pepper chili flakes, parmesan, or other toppings if you’d like! The macros below are just for the ingredients I used (keep in mind, different brands will likely have different macros).

One Serving…. Calories: 345 – Fat: 9 – Carbohydrates: 55 – Fiber: 12 – Protein: 19
Two Servings.. Calories: 172.5 – Fat: 4.5 – Carbohydrates: 27.5 – Fiber: 6 – Protein – 9.5
